Lemon Cookies with Raisins

Ingredients
  • 1 9-inch graham cracker or cookie crumb crust
  • 1 envelope unflavored gelatin
  • 1/2 cup milk
  • 1 cup cottage cheese
  • 1/4 cup sugar
  • 6 tablespoons frozen lemonade concentrate, thawed (half of a small can)
  • 1 cup whipping cream, whipped
  • 1 can cherry pie filling


Preparation

In a saucepan over low heat, sprinkle gelatin over milk. Heat, stirring constantly, until gelatin is dissolved; remove from heat. In a mixing bowl, beat cottage cheese until smooth; add to gelatin mixture along with sugar and lemonade concentrate. Fold in whipped cream; spoon into crust. Chill thoroughly. Top pie with cherry pie filling.
