Cooking up a storm and loving it
One of my favorite things to do is try out new recipes that I think have good potential for being tasty. In addition to that, I get a chance to try new cookware I've found to see how it works with that recipe.
Fortunately, I've had more successes than failures…at least my husband thinks so. Very rarely does he tell me he would rather not have something again.
There are many days I spend pouring over cookbooks, looking on the internet, or checking out cooking blogs to find something easy to make that I can add to my list of "favorite" recipes. This particular recipe came to me in an email from a friend. I decided to give it a try and it turned out to be delicious! The best part was I got to use my new non-stick frying pan and silicone spatula.
Asparagus Frittata
Ingredients
2 tsp. olive oil
1 small onion, thinly sliced
Coarse salt & fresh ground pepper, to taste
1 lb. asparagus, tough ends snapped off, spears cut diagonally into 1-inch lengths
4 large eggs, lightly beaten
1 c. shredded Gruyere or Swiss cheese (or combine the two)
Directions
Preheat broiler. While broiler is heating, heat olive oil in a 10-inch oven-proof frying pan over medium high heat. Add onions & salt & pepper. Cook, stirring occasionally, until onions are softened, about 3 minutes. Add asparagus; reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes. Add eggs to pan and cook until almost set, about 2 minutes. Sprinkle cheese over eggs and place in oven to broil until cheese is melted and browned, about 3 to 4 minutes. Remove from oven and slide frittata onto a serving plate. Cut into wedges and serve. (Serves: 4)
Add a small tossed green salad and you have a light meal that's satisfying, too.
Since there were just two of us for dinner, we had leftovers. Breakfast the next morning was a simple warm up in the microwave which can be a blessing when one is trying to get ready to go to work, have a good breakfast, and get out the door on time.
