My name is Jamie Levine from Chefjamielevine.com, and today I'm going to show you how to make roasted peaches with bourbon syrup and smoked salt. The first step is to take your peaches, cut them in half and saute them with a little bit of butter, flesh side down, just until golden brown, flip them over, finish them off in a 350 degree oven for about 15 minutes. You will end up with these beautiful peaches, caramelized peaches at the end and while those are finishing in the oven, get started on your bourbon syrup, super simple. I take equal parts of bourbon and brown sugar so that will be half of a cup of each. If you need more, just know that the ratio is one to one, go ahead and put it on your stove on low heat, just until you can reduce down into a syrup and finish I'm going to plate the beautiful warm peach, take a little bit of that syrup which is also warm and do a little swirl if you want and smoked sea salt which you can buy from any specialty stores, just goes over the top.
