Learning the Chemistry of Chocolate in Chicago

As visitors and locals wander by the Notebaert Nature Museum, close to many of the best hotels in Chicago, they may well be swept away into a fantasy world by the aroma of chocolate seeping its way out of the onsite chocolate lab. Thanks to the Bloomer Chocolate Company, visitors are able to take part in the €Chemistry of Chocolate' event, which takes place every year in the city. The Chocolate Lab

At the Chocolate Lab ardent chocoholics can learn about the science behind the much-loved chocolate treats we all love to eat. For instance, what really is the distinction between milk and dark chocolate? Why does white chocolate sometimes appear grey? And actually, just what is €white' chocolate? Those taking a tour can learn about the emulsifiers and incompatible fats and their role in chocolate production, and health conscious chocoholics (perhaps an oxymoron!) can learn about health studies and findings done on chocolate. Whilst some may revel in the wealth of interesting information and the astonishing facts about the chemical properties of the sweet treat, others may simply be interested in tasting the finished product - and there is ample opportunity for that too.

The Event

The Illinois Science Council have partnered up with the Notebaert Nature Museum to bring their visitors the best programme containing plenty of information on the chemistry and scientific art behind the production of chocolate. There are seminars presented by Dr. Shelby Hatch of Northwestern University, along with Melissa Tisoncik the R&D specialist from the renowned Bloomer Chocolate Company. The Illinois Council is proud of this unique and well thought out event and behind an event. The thinking behind it is perhaps best demonstrated by their motto, a quote by Carl Sagan: €We live in a society exquisitely dependent on science and technology in which hardly anyone knows anything about science and technology.€ They attempt to demystify the concept of producing one of the world's favourite treats and, after the event you may actually find yourself able to answer the question of just why we can never seem to get enough of chocolate.
