Pork Medallions with Mustard/Cream Sauce
This recipe for pork medallions with mustard/cream sauce comes from Epicurious.com. I had a tenderloin left over from a party I'd catered and wanted to try something new. When I'm looking for a new recipe I often check Epicurious. The recipes aren't always good but that's more about my personal preferences than recipe quality. At any rate this dish offers the wonderful savor of pork cooked in butter and then topped with rich cream, pungent mustard, and tangy capers. Serve on fettucini with Parmesan Tomatoes on the side dish. (Larger image.) Serves 2.
