    • 1). Soak planks in water for at least 8 hours and longer if possible. Some soak them for as long as a day if you can.

    • 2). Season the chicken. Rub the salt, pepper, garlic and paprika on the skin of the chicken. Lay the chickens on the plank bone-side down. Preheat the oven to 350 degrees Fahrenheit.

    • 3). Place the roasting liquid in the pan. This is the liquid you will use to make sure the pan doesn't dry out and burn in your oven. Use beer or wine if you have it to spare; the aroma will infuse into the chicken. Otherwise, water is fine. Place the plank with chicken on top in the liquid.

    • 4). Place the roasting pan in the oven. Cooking time should be between 1 hour and 15 minutes to 1 hour and 30 minutes. Keep an eye on the pan and ensure there is about 1/4 inch of liquid in the roasting pan at all times. Check every 10 to 15 minutes. Forgetting to check the chicken could turn your oven into a smoky mess or could start a fire.
