Video: Roasted Cauliflower & Cheese Recipe

Good afternoon, my name is Jason Tilmann, executive chef here at Triomphe Restaurant and The Iroquois Hotel, 49 West 44th Street, between 5th and 6th Avenue in New York City. Today we're going to go ahead and make some roasted cauliflower with Parmesan cheese. Super simple, super easy and full of flavor. Lets go to the stove. So we have a nice hot pan, a little bit of extra virgin olive oil and we have our cauliflower. What I've done is I've just taken that cauliflower and cut it up into medium sized pieces. Okay, just like that. Look at that, how easy that is, alright. Actually, I'll use it all. That's about a half a head of cauliflower. So salt and pepper, a little salt and a little pepper and we're going to go ahead and given this a toss. Cook it in the pan for about a minute and a half and then we're going to go ahead and put it in the oven and roast it. Give it a nice toss and go right in the oven. 350 degree oven. Okay, cauliflower's been in a 350 degree oven for about 6 or 8 minutes. So we're going to take our cauliflower and we're going to put it in our plate. Look at that beautiful color, I'm telling you, it's so easy. Right? Our nice cauliflower, alright we're going to take and sprinkle, I'm using Parmesan cheese and I let the cheese melt from the heat from the cauliflower, some fresh chopped chives. Re-upping the ante on a little bit of salt and a little bit more pepper just to make sure. A little bit of extra virgin olive oil and there we have our roasted cauliflower with Parmesan cheese.
