A stainless steel pressure cooker is not known to be a good conductor of heat. A cooker made from stainless steel contains hot spots. This means there may be certain areas that would be hotter than other areas. Due to hot spots, cooking would take longer time. Therefore, you should purchase a pressure cooker that has an aluminum sheet attached to its base. You would get the best of both worlds in one device.

How big should your pressure cooker be?

As most pressure cooker is 6-quart models, it is recommended to buy an 8-quart model. A pressure cooker can be filled 2/3 of the way as all juices and minerals from the ingredient would remain inside the cooker. You need to leave some space for it. Certain recipes require bigger pots. You can cook less food in bigger pot but not vice versa.

Wide or tall

Wide pressure cooker is more efficient and takes less cooking time than tall cookers. The food can be seen easily, the cooking surface is bigger, and the inside of a wide cooker can be easily reached.

A pressure cooker with long handle and a helping handle on the other side would make it easier to lift. Before you purchase a pressure cooker, keep the above-mentioned points in mind. Do not buy cheap model, as there is a risk of you purchasing another one after a few years.
