Seasonings to Go in Breading
- If you want to prepare a basic breading with just a little bit of seasoning, simply add salt and pepper to the flour or bread crumb mixture before coating the meat or vegetable with the breading. Using only salt and pepper will allow the flavor of the food you're breading to shine through, so it's best to use this simple seasoning with foods that are flavorful, such as zucchini or other fresh, in-season vegetables.
- If you want to add a bit of heat to the food you're coating, add a pinch of cayenne to the flour mix or breadcrumbs before dredging the food in the mix. You can also add other peppery ingredients to the breading, such as paprika or chili powder. If you want a curry flavored dish, such as curried fried fish, add a teaspoon or so of curry powder to the flour.
- Dried herbs such as oregano, thyme or marjoram make good breading additions for Italian-style breaded foods such as chicken or eggplant Parmesan. You can mix and match the herbs as you like or purchase a commercial Italian seasoning blend. Add a tablespoon or so of grated Parmesan cheese to the breading along with the dried herbs for an extra boost of savoriness. Garlic, either dried or in powder form, is another tasty addition to Italian seasoning for breading.
- While eggs or egg whites are traditionally used to coat the food before breading, so that the flour or breadcrumbs cling to the food, you can replace the egg with something a little more flavorful. For barbecue-style breaded chicken or tofu, coat the food with prepared barbecue sauce before dredging it in the breading. For extra spicy hot wings, dip the chicken in hot sauce before adding the breading, then toss the fried wings in the hot sauce again.
