How to Perform Quarterly Maintenance on Commercial Ice Makers
- 1). Open the door to the ice machine and empty out all ice from the bin.
- 2). Move the system switch to "Wash" and add approximately 1 ounce of ice machine cleaner to the ice trough. When the wash cycle is complete, turn the power switch to "Off" and disconnect the power cord. Disconnect the water supply as well.
- 3). Disconnect the water hose, water pump cover, and water distribution tube. Remove any screws holding together the water pump and remove the assembly.
- 4). Remove the ice thickness probe and set it in a container with 2 oz. of ice machine cleaner and 20 oz. of water. Allow the probe to soak for at least 10 minutes before wiping the probe well with a sponge and rinsing it thoroughly. Set it aside to dry.
- 5). Disconnect the screws holding the water distribution tube and slide the distribution tube out. Rotate the splash shield counterclockwise and remove the float valve by pulling the valve forward and out. Disconnect the water inlet tube from the valve and take off the filter screen and cap.
- 6). Remove the siphon tube, typically located at the water trough bottom, and remove the screws to disconnect the water trough completely.
- 7). Remove the ice bin door from the unit.
- 8). Mix together 1 gallon water and approximately 15 oz. of ice machine cleaner. Pour half of the mixture into a large bucket and place all disassembled parts into the bucket. Allow to soak for at least 10 minutes and then use a soft brush to gently scrub the components.
- 9). Use the other half of the cleaning mixture to scrub all ice machine surfaces.

Rinse all disassembled parts with water and use a clean, damp cloth to wipe the ice machine surfaces. - 11
Reassemble the ice machine and connect the power and water supply. Move the power switch to "Wash" after adding approximately 2 oz. of ice machine sanitizer to the water trough. Allow the cycle to finish. Turn the power switch to "Off." Mix together 6 gallons water and 5 oz. of sanitizer and use a clean cloth or sponge to thoroughly apply the sanitizer mixture to the ice machine surfaces. Restore power and turn the power switch to "Ice."
