    • Residential kitchen heat might be less severe than that experienced in a commercial setting; however, it can still get pretty hot just cooking one meal in your home kitchen. Good ventilation diverts that heat before it builds up to unbearable heights, helping to prevent difficulties as you navigate around the stove or oven area of the kitchen.

      Commercial kitchen settings -- which can include fast food, sit-down restaurants, as well as show and institutional kitchens -- deal with a lot more heat than residential ones. These commercial kitchens must remove the unbearable heat buildup that would occur if ventilation and extraction methods were not implemented. Otherwise, their wait staff and others who work in the kitchen will be unable to stand the growing temperature. In addition, whether it is a residential or commercial kitchen, your other kitchen appliances -- the ones that refrigerate -- have to work harder when your kitchen is too hot.

    Reduces Moisture Buildup

    • Steam in a kitchen needs to have an exit route to prevent the buildup of moisture near the stove or oven and other appliances and work surfaces. Moisture buildup can produce mold and mildew, which, in turn, can cause health conditions such as allergies.

      Good ventilation systems in a kitchen prevent this moisture buildup, removing the steam to an outside area. But some progressive ventilation systems harness the byproducts produced by cooking, such as heat (and inadvertently the moisture that goes along with it). These environmental ventilation systems use the heat for such things as warming water used for domestic water.

    Improves Kitchen Comfort and Productivity

    • Hot kitchens are not pleasant to work in and can result in matching emotions. Running around working in a kitchen that is too hot is even worse and does not help with work productivity. Workers in commercial kitchens are also under stress to cook foods for customers within a certain time frame, potentially raising blood pressures and body heat from that tension.

      But good ventilation and extraction systems in a kitchen help diffuse rising temperatures in the body and the kitchen. Work productivity is increased, and the potential for error and danger are reduced as cooler minds and temperatures prevail.

    Reduces Kitchen Odors

    • Kitchens can be filled with the overpowering aroma of baking cookies and rising bread; kitchens can also be filled with strong seasoning smells and other odors. Ventilation outlets in the kitchen help reduce odor smells in a kitchen where pleasant aromas are preferred, especially if long work hours dictate you stay in the kitchen all day.
